The cuisine is overseen by Chef Alfonso Iaccarino, patron of Don Alfonso 1890. Our cuisine is inspired mainly by traditional Neapolitan recipes, although with a modern touch and focus on using fresh and local ingredients. All products that we use are in fact grown in local farms of the peninsula and are what we consider to be our most important heritage.
